3-4 fresh basil leaves
1 ½ oz. Whipsaw Rye
¼ oz. Partner Sweet Vermouth
1 oz. pureed watermelon
¾ oz. honey syrup (1:1 honey to water, stir until well mixed)
½ oz. fresh lemon juice
Soda water
1 egg white (optional)

Directions

In a shaker, gently muddle the basil. Add the egg white to the shaker and shake ten seconds. Add ice and all other ingredients (except soda water) and shake until well chilled. Add a splash of soda water to the shaker and stir with a bar spoon to gently mix. Double strain into a chilled coupe glass.
